Explanation
NOTE
〜ないことはない is a double negative meaning 'it's not impossible' or 'I can if I have to'.
食べられないことはないけど、好きじゃない。
It's not that I can't eat it, I just don't like it.
Double negative — technically possible but unwilling.
NOTE
The two negatives cancel out, suggesting grudging possibility or a reluctant admission.
